Can I have some more chocolate?

 

When my son was in first or second grade, we used to stop at a coffee shop near his school for breakfast.  He would often get a chocolate croissant.

One morning while he was eating, he shared that he wished that the layer of chocolate went all the way to the edges.  He didn’t like the part that was just bread.  Luckily I did and he would give me the crusts and I’d happily eat them, scavenger that I am.

I suggested to my son that he could tell the coffee shop folks about his comment.  He told them and do you know that they started making them with more chocolate?

The moral of the story?  Speak up!  And, more chocolate is always better!

 

Breaking food down into serving sizes

I have been watching my serving sizes lately.  My favorite afternoon snack is pretzels.  The bag I buy has 4 services.  That’s 5 pretzels per serving.  I was a good little girl and counted out 4 bags of 5 pretzels each and wrapped up each in tin foil.

I can do this.  You can too!  :)

 

Kitchen Aid on the Brain

 

Forgive me but I can’t stop thinking about these mixers.  They combine so many things I care about: hand-made things, people working in manufacturing, cooking, colors, and quality.  Take a look at this video about the history of these mixers.  You just might want one too!

By the way, my latest favorite color is red.  :)

 

I Deserve A KitchenAid Stand Mixer

 

I want one.  Plain and simple.  When you get to the point when you are turning 50, you love to bake, and you’ve never had one, you deserve a $350 mixer.  Don’t you agree?

The big decision is what color to get!

Magic Cookie Bars

 

I like the idea of signature dishes.  You know, that dish that everyone associates with you.  My new signature Christmas sweet dish is Magic Bars.  My grandmother used to make them.  They are sooooo good.

How can you go wrong with graham crackers, butter, coconut, nuts, sweetened condensed milk, and chocolate?

The key: resist the urge to add more than the amount called for.  If you do, your bars will fall apart.  Trust me on that.

Sweet potato pie

I love sweet potato pie.  I always have.  Sweet potato pie, staple dessert in the African-American community.  Sweet potatoes are awesome: baked, french fried, in a casserole with marshmallows, and candied.  But sweet potato pie is the ultimate.

 

Sharing the joy of cooking

I am enamored with cooking.  It is obviously a very old art and a necessary one.  Cooking is survival and love.

With all the fast food and ready-made overly processed food out there, I know that cooking is essential to our survival.  I support cooking in my life and encourage it in others.  Here are a few things I do:

  • Give cookbooks as gifts
  • Talk about cooking
  • Share recipes by email, mail, Pinterest
  • Connect with others who love to cook
  • Blog about cooking and read food blogs
  • Gather, write down, and keep family recipes
  • Teach others, especially younger family members, how to cook

5 minute cake in a mug

 

I love baked goods but they are my downfall.  One way to satisfy my sweet tooth without going overboard is my discovery of  the single sized baked good.  Case in point: the 5 Minute Cake In a Mug.  What a fabulous idea!  No more eating the whole pan of brownies.

I had made this one time before and must have liked it because I added it to my collection.  Last night I wanted something sweet. I asked my husband if he wanted me to make brownies.  He declined, trying to be good.  Well I wasn’t going to make a whole pan of brownies to tempt him and gorge myself.  So, 5 minute cake in a mug to the rescue!

The only problem, it’s got a zillion calories.  Next time I will make some healthier substitutions like applesauce for the butter, or use less butter.  Something.  But it was still better than eating a pan of brownies!
