Tips for Fluffy Pancakes

My pancakes are not the best.  I find them tough, and well, flat.  I’ve done some research and here are some tips for fluffy pancakes which I plan to try.  I guess I need to try one at a time to be scientific and to figure out what really works!  I will let you know.  Here are the tips:

  1. Separate the yolk from the white.  Beat the whites and fold them in at the end.
  2. Measure ingredients carefully.
  3. Do not over beat!
  4. Use less milk for fluffier pancakes (more for denser).
  5. Substitute club soda for liquid ingredients.
  6. Go to IHOP.  🙂

I’m continuing to read The Crowning Glory of Calla Lily Ponder by Rebecca Wells.  There was a great breakfast described that I made almost verbatim for my brother’s visit this weekend.  My husband was very happy.  I get the best recipes and menus from my pleasure reading!

Now doesn’t that sound lovely?  The breakfast was quite a feast! 

More about the book.  The main character shares how she uses her hands to heal people while washing their hair.  I don’t have a job where I physically touch people but I believe that all of us have the potential to be a healing force in the lives of others.   A kind word.  A smile.  You can send love to those you come in contact with and make a positive difference in their days and their lives.  Just try it.
